I vividly remember elementary school field trips.
Not so much WHERE we went, but the FOOD that was packed.
(Is that wrong? To remember the food more than the experience? Maybe.)
At my elementary school, you could either pack your own lunch or have the lunch-ladies pack something for you on these trips. My mom always went the lunch-lady route because a) she doesn’t cook and b) because she was a smart woman. The packed lunches had THREE distinct pieces: 1) a peanut butter and honey sandwich, 2) carrot sticks wrapped in tin foil and 3) no-bake cookie bars that had triple the amount of sugar necessary. EVERY SINGLE TIME.
This bagged lunch was a highlight of my childhood.
Flash forward to now and I’d tell you that there was way too much sugar in that goody bag and not enough protein. Whomp whomp. Adulting is hard. While I’m totally down with eating everything in moderation, I know that fueling my body and treating it well means that I have to make better nutritional choices 80% of the time.

Peanut butter and honey just makes me feel happy….a sweet and salty powerhouse. I decided to recreate that magical childhood memory but give it a (healthy) adult twist. The result is something noteworthy (and totally pinnable btw). We can’t stop eating them. PEANUT BUTTER & HONEY PROTEIN BALLS!!
With only THREE ingredients, these little gems have a perfect balance of healthy fat and satiating protein. Better than the nutrition stats though is the TASTE. They legit taste like a pb and honey sandwich. Sweet, salty, addictive. Give them a try!
Peanut Butter & Honey Protein Balls
Ingredients:
1/2 cup natural peanut butter
2 scoops protein powder (I love this one
)
2 tablespoons Nektar Naturals granulated honey
In a medium bowl, combine all three ingredients. Form into small balls and place on wax paper. Store in refrigerator.

I do kinda miss peanut butter… It’s such an intricate part to so many recipes – such a great binder, and just so dang delicious right off the spoon! lol!
