Switching gears away from vacation talk today and sharing an EASY and QUICK recipe that I use at least once a week.
MY [coveted*] QUICHE RECIPE.

I like all the companies I share on LL (and believe me there are some that don’t make it to the blog because they’re not worth talking about) but this partnership with Eggland’s Best just fits our lifestyle.
We eat eggs every.single.day. No joke. Scrambled, in a protein pancake, with bacon, in a quiche, in brownies. They’re an inexpensive form of protein and this particular company has some of the best around.
Compared to ordinary eggs, each Eggland’s Best large egg contains:

Back to the quiche.

The Easiest Quiche You’ll Ever Make
- 8 large Eggland’s Best eggs (6 whole eggs + 2 egg whites), beaten
- 1 cup milk (sometimes I even use almond milk and it comes out fine)
- 1/4 cup hot sauce
- 1 package Canadian bacon, finely diced
- 2 cups fresh baby spinach, chopped
- 1 cup mushrooms, finely chopped
- 1 1/4 cup finely shredded 2% milk cheese (I typically use sharp cheddar)
- Pre-made pie crust
Preheat the oven to 400 degrees F. Combine the eggs, milk and hot sauce in a bowl. Layer the Canadian bacon, spinach, mushrooms and cheese in the bottom of the pre-made pie crust. Pour the egg mixture on top. Bake for 40 to 45 minutes until the egg mixture is set and the top is golden brown. Enjoy!
