As part of my ambassadorship with Blue Diamond, we were challenged to come up with a “Easy as Breeze”-5 ingredient recipe using BD’s Chocolate Almond Milk. Two things I love –> 1) EASY and 2) CHOCOLATE. I immediately thought of those yummy pudding pops that my mom used to buy for us in the 90’s. Remember those?? (I think they actually still sell them.) Mama would buy a box and Katy and I would devour them within the day. It worked out because Katy loved the vanilla and I always grabbed for the chocolate – the “swirl” flavor would be split 50/50. Ah, memories….
Enter adulthood.
I can’t eat an entire box of pudding pops. I mean I could…but probably shouldn’t. They aren’t the most waist friendly. So I created an EASY twist on the 90’s classic AND I added peanut butter this time because everything is better with peanut butter. Made with only FOUR ingredients, they mimic the texture of pudding pops – creamy and delicious – but have adult nutrition. Get this –> each pop has only 77 calories and they’re packed with protein so you can even use them as a post-workout treat. The chocolate almond milk creates a perfect creamy base that I wasn’t expecting.
We’ve been eating these out on the deck while playing with the water hose….because while I’m an adult, I still sometimes act like a child. Katy – you can keep the vanilla – I call dibs on these peanut butter chocolate ones.
Easy, Breezy PB Chocolate Protein Pudding Pops
Ingredients:
- 1 cup Blue Diamond Chocolate Almond Milk
- 1/4 cup powdered peanut butter
- 1 scoop whey protein powder (I used this
one)
- 2 tbsp. cocoa powder
Mix dry ingredients in a large bowl then whisk in almond milk. Pour into pop molds (I like these). Freeze for at least one hour. Enjoy! Makes 6 pops.
Nutrition Stats (per pop): 77.5 calories, 2 grams fat, 8.25 grams carbohydrate, 7.75 grams protein
