new baby

Today has been great so far!  To recap last night, I did end up going to the gym when Travis got home.  I try to lift Monday, Wednesday, and Friday, alternating upper and lower body, with core every time.  Yesterday was an upper body day, BFL style with core mixed in.  The hardest move:  REAL pullups.  I can successfully do….two.  Had to put my foot up on the squat bar.  Something I need to work on.

We did end up having grilled porkchops and a green salad.  I even had to check my dressing to see if it had added sugars.  All but TWO in my arsenal had it.  Luckily, my favorite, Annie’s Roasted Red Pepper, never fails!

Oh and look at these two guys.  Fresh from MY garden!  See, Dad, I can grow something.  Organic, at that.

We ended up eating picnic-style outside as the sun set.  Dessert before bed was Puffed Wheat cereal with unsweetened Vanilla Blue Diamond Almond Milk.  Hit the spot!

On to today….

  • Morning walk with the girls
  • Eggs and Leaves
  • Incredibles with Henry (while Clara slept)
  • Grocery store run (yes, again!)
  • Home to put kids to bed
  • Make Kate’s meal

That last bullet, make Kate’s meal, is what the title refers to. My friend Kate just had a baby girl a couple of weeks ago.  I’ve been meaning to bring her a meal and meet Olivia, but am just now getting around to it.

On the menu:  Sour Cream and Chicken Enchiladas, Mexican Rice, and Chocolate Cookies.  I’d totally love it if someone brought me this meal :)

I’m leaving the baking part up to Kate (she wants to freeze it).  I’ll have to post a recipe of this go-to dish.  Enchiladas are SO easy and healthy if you make the right substitutions.  I hope it blesses Kate’s family – she is a blessing to me already!

Currently, it’s 4pm and I’m finishing up the cookies for her, sipping on this wonderful iced coffee.

I’m just now getting into the groove of blogging and I’m not sure how much I like this afternoon posting.  It leaves the whole evening out.  But then again, I’m not sure I want to be one of those “show everything you did” type of bloggers either.  I guess that’s all to say that I’m still finding myself, so bear with me.
